Use the international language: English
I did have a problem with downloading but it was resolved. Also the directions or posts were in Italian. English is the international language so use it.

Installation went without issues
Installation went without issues. Version 21H2 IOT. Windows key was accepted. Remember that you have to use Rufus to create installation key. All windows updtates went well. Office 365 installation went well.
