The knives by Sapega is absolutely beautiful. The steel pattern and the handle exude good quality. It arrived in great condition and cutting through things is a very satisfying experience. It went through a banana without even pushing down. It’s also very comfortable to hold and has a balanced weight to it without feeling heavy. The edge is paper thin and does seem a little delicate so I would not recommend sharpening this with anything other than a whetstone. However it does seem built to last as long as you take good care of it. It’s an expensive knife but the craftsmanship is pretty worth it. I’m new to Japanese blades and since Seijaku is simply a company of famous chef Igor Sapega. I wasn’t sure what to expect but I am actually very satisfied with the quality control.

I am really happy with this chef knife, it has 67 layers, it is very light and so classic, its handmade price is much more affordable than many knives, I recommend it to professionals.
