Our white balsamic condimento is elegant, soft and light — low in acidity, well-balanced and ideal for everyday use. Made from Trebbiano grapes only (not the darker Lambrusco), it has all the mellow flavour of a good balsamic but stays pale, so it dresses a dish without discolouring it. That makes it perfect over anything you'd rather keep light in colour — pasta salads, potato salads or grilled white fish — as well as salads, meats, fish, vegetables and even desserts. Use it on its own, or mix three parts olive oil to one part balsamic for a dip with fresh, crusty bread or a dressing. Being made from grape must, it's suitable for vegetarians and vegans, and gluten free. It pairs beautifully with our infused oils: try it with our Lime oil over crab, pan-fried scallops or prawns; with our Mint oil over an apple, pear and rocket salad, a fig and mozzarella salad, or apple and brie; or with our Rosemary & Garlic oil over white fish or fish pie. It's made from Trebbiano grapes grown on the estate of Nicolo Verrini, in the countryside near Modena in northern Italy — carefully selected, crushed and gently matured to create this soft, delicate white balsamic.
