When I received the shipment they had already thawed, and one of the items was punctured and leaked blood all over. Threw it all out.

Pretty to look at and flavorful but tough
I sent these to my son in NYC for Christmas and the flavor was great and they looked great but they were VERY tough. Disappointed as I have purchased buffalo/bison numerous times.

Bison sauce
I made Bolognese sauce using the ground bison and it was the best sauce I made!
However, the tomahawk steaks were a disappointment as they were too chewy. They were grilled as instructed but they seemed to be much smaller/thinner than expected.

Quite Disappointing
To say I'm disappointed is an understatement. I ordered two Tomahawks for Christmas dinner expecting juicy and tender steaks, but that isn't what I got. The steaks were dry and quite challenging to chew. Each steak was rare to medium rare.
The steaks were kept frozen until they were ready to eat. The only positive I have to say is that the shipping was very quick and they were packaged well.
The cost of these steaks was high so I expected much better, especially since it was Bison.

I paid for average weight as you advertise of 2.5-3.0 lb each but average weight was actually only 2.3lb. if I purchase more I wish to be charged by the pound. Some packages lost vacuum seal. This was used for jerky.

Hi Dennis, Thank you for taking the time to write a review and being a return customer. We're very grateful for your support. However, we are sorry that the weight was slightly lower than expected. I will have our team look into this and adjust anything. Occasionally the frozen packages of meat can bump against each other during rough handling in transit and cause tiny micro tears in the packaging that break the seal. The meat is still very much safe to eat, but we understand the perception is not ideal. I will have customer service follow up about the reduced weight.

Excellent quality meat!!
Excellent quality meat!!! that arrived promptly and still frozen solid. It's important not to overcook bison, but we took care and the results from the ribeye & NY Strip cuts were just amazing! We used some for bison tataki & just ate the rest with roasted carrots & taters. We used an herbal dry rub of thyme, oregano, olive oil and black pepper (no salt until after cooking to keep the meat moist). So good!
